From the Chef ~ Maple Whipped Sweet Potato

Just when you thought Potatoes couldn’t get any better….

Our chef Arvin Dhansew created the Maple Whipped Sweet Potato.  Delicious!

Maple Whipped Sweet Potato

4 large sweet potato wash and dry

½ cup of good quality maple syrup

1 stick of whole butter

Salt and white pepper to taste

Method

On a baking sheet, spread and even layer of kosher salt and place sweet potatoes on it

Place pan in 400 degrees oven and let cook until sweet potato are tender about 1 hour

Remove and let cool for about 10 mins or until you feel comfortable handling it

Gently remove skin and place in a mixing bowl

Add maple syrup, dice butter and whip using a whisk or if you have a mixer this would be a good time to use it.

Whip potatoes until smooth, add more maple syrup if desired to me more sweet
