From The Chef ~ A Strudel Like No Other

Try this recipe for Caramelized Apple and Pear Strudel from our Chef Arvin Dhansew.

Caramelized Apple and Pear Strudel with Citrus and Honey Cream

3 granny smith apples peeled, cored and cut into 8 wedges

Macintosh, gala or golden delicious will work just as well

3 bosc pears peeled cored and cut into 8 wedges

1 cup of sugar

1 tbl butter

1 package of phyllo dough

4 tbl of melted butter


In a non stick pan add sugar and and butter

Add apples and pear and cook until tender and caramelized about 30 mins

Stirring constantly to avoid burning

Remove mixture and let cool

On a flat surface lay one sheet of phyllo dough and brush with butter sprinkle layer with granulated sugar

Repeat this process until you have achieved 4 layers

Add half of the apple and pear mixture at one end and gently roll into a log shape

Brush with melted butter, Strudel can be refrigerated at this point and baked when needed. 

Bake in a pre heated 350 degrees oven until golden, about 20 mins

Let rest for 10 mins before cutting into 4 inch pieces and served with dollop of citrus cream

For Citrus Cream

Zest of one orange

Zest of one lemon

Zest of one lime

6 tbl of honey

2 tsp of good quality vanilla

1 pint sour cream


In a mixing bowl combine all ingredients and mix well

Refrigerate and use as needed
