Cous Cous – Healthy, Delicious and Easy to Prepare

Serves 6


2 cups Israeli Cous Cous

1 cup of pitted and chopped olives

1 cup of chopped tomatoes

4 cups water

½ cup of cubed feta cheese

5 sprigs of mint

½ cup of extra virgin olive oil

1/3 cup of red wine vinegar

Salt and pepper to taste


Separate cous cous into three

In a pot add a small amount of oil and toast first batch of cous cous stirring constantly to prevent burning, after 10 mins add second batch after 10 mins add third batch

This process will give the cous cous a tri color effect

Add water, bring to a boil and reduce to simmer until all water is evaporated or cous cous is tender, remove and let cool

Add remaining ingredients and mix well

Note: careful with the salt, for there’s plenty of salt in the olive and feta cheese
