From Our Chef ~ Quinoa

Everyone is talking about Quinoa. A Super Seed and a super food.

Serves 6

2 cups quinoa

3 tbl vegetable oil

4 cups of water or stock

2 orange peeled and segment

1 cup of dried cranberries

1 yellow pepper seeded and diced

1 red pepper seeded and diced

½ cup of chopped pecans

¼ cup of chopped Italian parsley

¼ cup of chopped chives

Method

In a pot add quinoa with oil and toast for 6-7 mins this will add a nutty flavor to the grain

Add water or stock and bring to a boil

Season with salt and pepper and reduce to simmer

Remove quinoa and lay on baking pan to cool

In a mixing bowl combine all other ingredients and fold gentle

Drizzle in dressing mix well and serve

Vinaigrette

1/4of orange juice

Juice of ½ a lemon

Zest of 1 orange and 1 lemon

2 tbls chopped chives

2 tbls of ground mustard

1 cup of olive oil

Method

In mixing bowl combine all ingredients except oil

Slowly drizzle in oil whilst whisking vigorously

Season with salt and pepper to taste
