From Our Chef ~ Short Ribs

The Recipe you’ve been waiting for, Short Ribs by our Relish Caterers

Serves 8

8 -8oz short rib of beef (bone still attached)

1 onion medium diced

2 carrot medium diced

3 stalks of celery medium diced

5 cloves of garlic peeled

1 bottle of red wine

4 sprigs of thyme

6 whole black peppercorns

2 whole bay bay leaves

Beef stock to cover meat whilst braising


Season meat well with salt and black pepper

In a hot skillet sear meat on all sides to achieve brown color

Remove meat and sit in a braising pan

In same pan remove excess fat and add vegetables making sure to scrape fond off the bottom using a spatula

Cook for 10 mins and deglaze with red wine, let wine reduce by almost ¼

Add beef stock, bay leaves and peppercorns

Bring to boil, pour mixture over short rib, cover with aluminum foil and braised in pre  heated 350 degrees oven for 3 hours or until inserted fork goes in without much resistance

Remove meat and strain sauce into a sauce pot

Add your favorite root vegetables, Relish suggestions would be turnips, beets, rutabaga and carrots

Cook until vegetables are tender

Add meat back to pot and serve


Mashed potatoes or a creamy polenta would be ideal for this dish
