A salmon recipe that is sure to impress: Grilled Salmon with Caper and Olive Relish on Roasted Vegetable Cous Cous with Mint and Feta Cheese

Grilled Salmon with Caper and Olive Relish on Roasted Vegetable Cous Cous with Mint and Feta Cheese
 
Serves 6 
 
Ingredient for Salmon
• 4 pieces of 5oz salmon 
• 2 tablespoon vegetable oil
• Salt and Pepper to taste
• 2 tablespoon of chopped oregano 
 
Method:
Pre heat grill to 400 degrees.
Brush salmon with oil and season with salt, pepper and chopped oregano.
Place salmon on grill flesh side down. Cook for 3 mins, to obtain the cross marks gently lift salmon and turn 45 degrees and cook an additional 3 mins. Flip salmon over and cook for an additional 3 mins. If you desire a more well-done flavor, cook for an additional 3-5 mins.
Remove and keep warm.
 
Caper and Olive Relish 
• 6 oz jar of caper (rinse well) 
• 5 oz  of pitted olive (rinse well) chopped
• ½ red onion diced 
• 2 tbl of chopped oregano
• Juice of one lemon
• ½ cup of olive oil 
• 1 large tomato diced
 
Method:
In a mixing bowl add all ingredients and mix well.
Let stand for at least 45 min.  
 
Grilled Vegetable Cous Cous with Mint and Feta Cheese
 
Ingredients
• 8oz of instant cous cous
• 10 oz of boiling water 
• 10 oz of grilled vegetable chopped 
• ½ cup  of crumbled feta cheese 
• 5 sprigs of fresh mint
• ½ cup of olive oil 
 
Method:
Add cous cous to mixing bowl.
Pour hot water over and seal with plastic wrap, let mixture stand for 15 -20 mins.
Remove plastic wrap and fluff cous cous with a fork by gently scraping the top until the entire mixture is fluffed and grains are not sticking together.
Add remaining ingredient and gentle fold mixture together. 
Season with salt and pepper to taste.
