Halloween Recipes from Relish's Executive Chef, Chef Arvin Dhansew

Here are two delicious recipes from Chef Arvin Dhansew to spice up your Halloween party or any fall gathering!

Cream of pumpkin soup with toasted pumpkin seeds and crème fraiche Serves 8 

1 large pumpkin peeled, diced and seeds reserved 
1 spanish onion diced 
2 large carrots peeled and diced
3 stalks of celery diced 
3 quarts of chicken or vegetable stock
2 sprigs of  thyme
5 whole cloves
1 cinnamon stick 
2 bay leaves
1 small container of crème fraiche
4 tbl of vegetable oil 
1 qt of heavy cream or milk 
Salt and pepper to taste
Method :
  • In large soup pot add oil and sweat onions, carrots and celery until translucent 
  • Add diced pumpkin and cook for an additional 10 mins
  • Add chicken stock 
  • In a piece of cheese cloth, wrap thyme, cinnamon stick, cloves and bay leaf, tie with into a bundle and add to soup mix
  • Bring mixture to a boil and lower to simmer 
  • Simmer for 45mins -1 hour until vegetables are tender 
  • Remove cheese clot and discard
  • In a blender add soup and blend until smooth, strain if necessary
  • Return soup to pot and slowly whisk cream or milk
  • Season to taste
For garnish and serving suggestions:
Take reserved pumpkin seeds toast in dry pan until crisp.
Serve soup in hallowed out mini pumpkins with drizzle of crème fraiche and sprig of chervil.
BBQ glazed rib of beef 
Serves 8 
4 rack of ribs 
1 jar of bbq sauce 
4 tbl of paprika
4 tbl of chili powder 
4 tbl of garlic powder 
2 tbl of onion powder 
1 tbl of cayenne pepper
2 tbl of ground black pepper 
2 tbl of kosher salt 
½ cup of dark brown sugar 
  • Mix all spices and combine well 
  • Pat dry rib with paper towel and sprinkle rid with spice mix creating an even coat 
  • Place rib on a wire rack and place in refrigerator uncovered for minimum of 2 hours or max 4 hours 
  • Pre heat oven to 350 degrees and place rib in middle of oven, let cook for at least one hour or until meat is tender
  • Remove rib and turn oven up to 400 degrees 
  • Place rib on top part of oven and glaze with BBQ sauce every 5 mins until meat is glossy 
  • Remove and let stand at room temp for at least 10 mins before cutting
