Brioche Bread Pudding with Raisins and Chocolate with a Vanilla Sauce ..YUMMY!

Serves 8



1 loaf of brioche bread crust removed and diced

1 cup off golden raisins soaked in hot water

1 cup of semi sweet chocolate chips

4 whole eggs

1 qt of cream (milk can be substituted)

Pinch of cinnamon

1 cup of sugar

1 tbl of vanilla extract



In a mixing bowl combine eggs, sugar, vanilla and cream, mix well

Fold in cinnamon and brioche make sure mixture well saturated, add more milk or cream if necessary

Place mixture in a baking dish, cover and bake in a 350 degree pre heated oven for 30 mins

Remove cover and continue to bake for an additional 10 mins

Let cool before cutting


Vanilla sauce


1 cup of sugar

2 cups of milk

3 egg yolks

1 tbl vanilla extract



In mixing bowl whisk egg yolks, sugar and vanilla until creamy

Gently pour in hot milk, whilst whisking, it is important that the milk gets poured in slowly or it will scramble the eggs

Pour mixture in pot and gently heat whilst constant stirring

Sauce is done when it coats the back of the spoon

Strain into an ice bath and cool
