Recipe from the Chef: Brioche Bread Pudding

Brioche Bread Pudding with Raisins and Chocolate with a Vanilla Sauce ..YUMMY!

Serves 8

What you’ll need:

  • 1 loaf of brioche bread crust removed and diced
  • 1 cup off golden raisins soaked in hot water
  • 1 cup of semi sweet chocolate chips
  • 4 whole eggs
  • 1 qt of cream (milk can be substituted)
  • Pinch of cinnamon
  • 1 cup of sugar
  • 1 tbl of vanilla extract

What you’ll need to do:

  • In a mixing bowl combine eggs, sugar, vanilla and cream, mix well
  • Fold in cinnamon and brioche make sure mixture well saturated, add more milk or cream if necessary
  • Place mixture in a baking dish, cover and bake in a 350 degree pre heated oven for 30 mins
  • Remove cover and continue to bake for an additional 10 mins
  • Let cool before cutting

Vanilla sauce

What you’ll need:

  • 1 cup of sugar
  • 2 cups of milk
  • 3 egg yolks
  • 1 tbl vanilla extract

What you’ll need to do

  • In mixing bowl whisk egg yolks, sugar and vanilla until creamy
  • Gently pour in hot milk, whilst whisking, it is important that the milk gets poured in slowly or it will scramble the eggs
  • Pour mixture in pot and gently heat whilst constant stirring
  • Sauce is done when it coats the back of the spoon
  • Strain into an ice bath and cool
